As Christmas approaches it is time to think about Festive Menu Planning and ordering some of the most popular fish for your seasonal menus. As always the regulars are likely to be Salmon, Sea Bass, Prawns and other premium favourites such as Lobster.
But it is also important to remember that supply of the right fish is an important factor when planning menus.
As we hit the last two months of the year, and also into January, farmed fish are a lot more reliable in terms of availability because there are a number of factors at play in shaping the (reduced) volume of supply.
There is the impact of quota restrictions and the fact that sometimes quotas have been used up as we hit the end of the year, before the new “quota year” starts on January 1st.
The other obvious factor is the weather which can both limit time at sea and also has an effect on transport links which limits the catch getting distributed as widely as possible and with potentially a real lack of transport to London.
And then there is the impact of Christmas itself and the timing of the holidays this year. Quite simply a lot of fisherman are quite tied to their simple lifestyles and at this time of year they prefer more family time and do less fishing.
Then we have the additional effect of Christmas and New Year being late in the week which, coupled with Scotland’s national holiday on Thursday 2nd January, means the likelihood of anyone working on Friday 3rd January is pretty remote!
