How long have you been doing what you do? 21 years

Describe the culture of your business in three adjectivesDemanding, changing, exciting

How would your clients describe your business? Thoughtful and caring. We tend to jump through hoops for the whole nine yards to satisfy requests and demands and we are proud of it.

You’re the Queen’s fishmonger…what would you cook for her? Goose egg omelette w/home grown Earlsfield spinach followed by simply grilled Gigha halibut w/garlic butter. Yum.

What would we find in your fridge? I’m probably quite a normal person. Ham, milk, eggs, cheese, truffles and turbot tronchons.

How many seabass can you fillet in a minute? I will challenge you to ask my production manager that question and await the colorful response.

How many seabass can your fishmonger colleagues fillet in a minute? 2 to 3 (that’s scaled, filleted and pinboned).

What’s the one problem you are best solving for your clients? Fulfilling demanding high-end orders within tight timescales.

What are you most passionate about professionally? The regular purchase of top quality prime fish for our clients.

What are some qualities that you value in a person? Punctuality, commitment, positivity and hard-working. Oh and its good if they smile!

Would you recommend your sector as a good career opportunity for a youngster? If no other avenues are available, it’s great. No seriously it is a very hard business, but rewarding. An unusual aspect of this business is that many people tend to fall into it by accident, then working a few years and before they know it, they’re feeling pretty passionate about it all. Numerous workers within this industry - no matter how long they have worked - still get excited by seeing a top quality ‘ stiff alive’ box of fish when it arrives from the coast; and that’s one part of this industry that’s really great.

What time do you get up? Depends if I am covering anybody. Will be anytime from 23.30 (at night) to 03.30 in the morning.

What’s the most random customer request you’ve ever had? A request for tuna eyes was pretty random!!!

Where can we find you when you’re not working? On the coast for a weekend trip or at an Earlsfield watering hole.

Any awards or medals, or even medallions? A few medals and a couple of trophy’s once donned the shelves of my home in both pool and swimming. However I would like to add that I am currently 43 and not seeking any extra medals.
